Ingredients:
- 1 pack of Indomie Hot & Spicy noodles
- 2 large eggs, beaten
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach or kale (optional)
- 1/4 cup diced onion
- 1/4 cup grated cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Oil or butter for cooking
- Fresh parsley or chives for garnish
Instructions:
- Cook the noodles: Prepare the Indomie noodles according to the package directions, then drain and mix in the seasoning.
- Make the egg mixture: In a mixing bowl, combine the beaten eggs with diced bell peppers, spinach (if using), and onions. Season with a pinch of salt and pepper.
- Combine with noodles: Add the cooked, seasoned noodles to the egg mixture and gently fold together.
- Cook the omelette: Heat a little oil or butter in a non-stick skillet over medium heat. Pour the noodle and egg mixture into the skillet, spreading it evenly. Cook for 3-4 minutes or until the bottom is golden brown.
- Add cheese: Sprinkle cheese on top, then carefully flip or fold the omelette and cook for another 2-3 minutes until the cheese melts and the omelette is cooked through.
- Serve: Garnish with fresh parsley or chives, slice, and enjoy your noodle omelette!
