Indomie Noodles Stuffed Bell Peppers

Ingredients:

  • 2 large robot peppers (any color)
  • 1 pack of Hot & Spicy noodles
  • 1/4 cup diced tomatoes
  • 1/4 cup grated mozzarella or cheddar cheese
  • 1/4 cup cooked ground beef, shredded chicken, or sautéed mushrooms (optional)
  • 1 tbsp olive oil
  • 1 tsp mixed herbs (oregano, thyme, or basil)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the peppers: Slice the tops off the robot peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and set aside.
  2. Cook the noodles: Prepare the Indomie noodles according to package instructions, drain, and mix in the seasoning.
  3. Mix the filling: Combine the cooked noodles with diced tomatoes, herbs, and your choice of protein or mushrooms. Add salt and pepper to taste.
  4. Stuff the peppers: Fill each bell pepper with the noodle mixture, pressing gently to pack it in. Top with shredded cheese.
  5. Bake: Place the stuffed peppers in a baking dish and bake at 180°C for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly
  6. Serve: Garnish with fresh parsley and serve hot with a side salad or garlic bread.
